It’s no secret that 100% pure honey is an important part of our products. It’s what gives our jun kombucha its signature clean, smooth flavor. But for us, honey is more than just an ingredient — it’s an important part of our company culture and ethos. 

In celebration of National Honey Month, we’d like to celebrate the sweet substance that some call “liquid gold” — and what honey means to us at Wild Tonic! Here are just four key ways that honey plays a role in our company’s offerings and overall goals. 

1. Honey = A Vital Ingredient in Wild Tonic’s Jun Kombucha 

You’re probably familiar with kombucha, but you may not know what makes jun kombucha different. That’s easy: honey. 

Both kombucha and jun kombucha are fermented tea beverages made with a SCOBY (symbiotic colony of bacteria and yeast.) However, where traditional kombucha relies on cane sugar to feed the fermentation process, jun kombucha is made with honey instead. In the case of our hard jun kombucha varieties, we also incorporate a small amount of cane sugar to increase the alcohol levels — but the key ingredient is still honey. 

The first thing you’ll notice is that honey imparts a much more mellow flavor on the finished product. In fact, it’s not uncommon for people who “don’t like kombucha” to say that jun kombucha is a game-changer for them! 

Honey also alters the fermentation process. Honey’s natural microbial qualities allow Wild Tonic’s jun kombucha to retain prebiotics in addition to the probiotics that make fermented foods so revered for their health properties. Traditional kombucha made with sugar typically only contains probiotics.

As you can read in this post, prebiotics and probiotics love working together — meaning that honey can increase the health benefits of an already feel-good beverage. 

2. Our Honey is Sustainably Sourced 

At Wild Tonic, we believe that every ingredient counts. Since honey plays a starring role in our entire line of beverages, we take great care to source the best stuff we can possibly find! 

We currently get our sustainably sourced honey from a multi-generation, family-owned organic farm. This delicious, single-source honey allows us to create a high level of quality and consistency that customers have come to expect in our products. 

Talk about happy bees. If you’ve already tasted our products, we don’t have to tell you that our high-quality honey lends a light sweetness and overall highly pleasing, clean flavor to the finished products. If you haven’t yet tried our jun kombucha, you’re in for a honey-kissed treat!

3. We Give Back to the Honey Community 

One of our company’s biggest goals is to support the bee population. Not only do we believe it’s important to give back to like-minded organizations, but we’re investing in our own future — and the future deliciousness of our products! 

For example, in 2017, NAOBA (short for Northern Arizona Organic Beekeepers Association) applied for 501(c)3 status in Arizona — with the help of Wild Tonic. In a statement, they said “we are extremely grateful to Holly Lyman of Wild Tonic Jun Kombucha for her moral and financial support during this application process.” They acknowledge that this would not have been possible “without Wild Tonic’s friendship and support.”
