Wild Tonic: Jun Kombucha Fermented With Honey
Jun kombucha is a little different than the kombucha you may have tried in the past.
Following the traditional method of kombucha-making, jun is made with a SCOBY. However, the fermentation process relies primarily on honey versus the cane sugar traditionally used to make kombucha.
At Wild Tonic, we use 100% pure honey to make our jun kombucha. Not only is it tasty, but it’s an amazing source of amino acids, antioxidants, enzymes, minerals, and vitamins.
(Note: To create our hard jun kombucha, we also add some cane sugar to the mix — that’s what adds the “buzz” to the finished product!)
Honey changes the fermentation process, reacting differently with the SCOBY; it allows the finished beverage to retain prebiotics in addition to probiotics (most kombucha only contains probiotics.)
It also affects the finished flavor of our fermented beverage. Many people consider jun kombucha to be a perfect option for people who “don’t like kombucha.” Honey imparts a far mellower flavor, making for easier and smoother sipping.
What Are Prebiotics?
Prebiotics are a type of dietary fiber that act as fuel for your gut bacteria.
Don’t get scared by the word “bacteria” — in this case, we’re talking about good bacteria. Your gut is like a major metropolis populated by bacteria, so you want to make sure that you’ve got plenty of the good kind circulating.
Prebiotics are like food for the good bacteria in your gut. By incorporating foods or beverages like Wild Tonic that contain prebiotics, you’re helping to keep that good bacteria healthy so it can do its important work with ease!
What Are Probiotics?
Probiotics are a type of good bacteria that live in your gut. Typically, it’s a mix of live bacteria and yeasts.
